Pizza Rolls: I like to make these for quick lunch on Sunday before church when we don't have a lot of timeIngredients:
1 tube crescent rolls (8 rolls)
4 string cheese
pepperoni
spaghetti sauce
The cheese melts better if it is room temperature when you start, but you can do it right out of the fridge too.
Directions:
The picture is pretty explanatory, but just in case...
Separate the rolls and place pepperoni on each roll (I do 3 or 4 slices, but you can do more or less depending on how much you like pepperoni). Then cut the string cheese in half, and put one piece on each roll. Roll them up around the string cheese, and bake according to package directions. When they're done, you just dip them in the spaghetti/pizza sauce and eat them!
A healthier Fruit Salad:
From Kimberly-don't get me wrong, I love Mommy's fruit salad, but this one is slightly more healthy- I used vanilla yogurt and skipped the marshmallows.
Ingredients:
1 (10-ounce) can pineapple chunks, drained
1 (11-ounce) can mandarin oranges, drained
1 medium apple, cored and chopped
1 tsp lemon juice
1 cup grapes, halved
1/2 cup Plain Greek Yogurt
1/2 cup sweetened, shredded coconut
1 cup mini marshmallows
- Add apple to a large bowl and toss in lemon juice to keep from browning. Add the pineapple, mandarin oranges, grapes, coconut, and marshmallows and toss to combine. Stir in Greek yogurt, gently tossing to coat.
- Refrigerate for at least 4 hours prior to serving to allow the flavors to meld together. Serve chilled.
